The festive season is here and so is purple Jasberry Rice - with a handful of recipes for sweet and savoury dishes that will brighten up your plate and tastebuds this summer!

Superfood Jasberry Rice is packed with antioxidants, boasts a delicious nutty taste, soft texture and, better yet, an amazing rich purple colour. This makes it the perfect base for summer salads, desserts, dishes (and more) over the holiday season! Mango Jasberry Rice Salad (prawns, optional)

Mango prawn salad

This versatile summer salad makes a delicious addition to barbecued dishes. Serve on its own, top with grilled prawns, or substitute with grilled fish or chunks of smoked salmon.

Ingredients for 6 to 8 servings:
1 cup Jasberry Rice (makes approx. 2 cups cooked)
1 large mango, peeled and chopped
1 large red capsicum, (either bottled grilled or fresh) chopped or thinly sliced
1 bunch of asparagus, pan-fried, cooled and sliced into short pieces (or green beans)
2 spring onions, chopped
½ cup roasted, skinless unsalted peanuts
¼ cup freshly chopped coriander
¼ cup freshly chopped mint
12 large cooked, peeled prawns, hot from the barbecue if serving on top of the salad, or cooked and cooled if mixing in.

Dressing:
2 tbsp soy sauce
2½ tbsp lime juice
5 tbsp canola oil
2 tsp sesame oil
1½ tsp brown sugar
⅛ tsp chilli powder (or add a chopped chilli to the salad)

Method:

Cook the rice according to packet instructions. Turn out and allow to cool. You can speed this up if needed, by spreading on a tray and refrigerating.

Add the remaining salad ingredients and the prepared dressing.

Toss together and serve.

Jasberry Coconut Sticky Rice and Mango Pudding (Vegan)

This creamy and sweet dessert with soft Jasberry rice pairs perfectly with fresh and zingy mango, making it an easy & delightful dish that will impress!

Ingredients for 4 to 6 servings:
1 Cup raw Jasberry rice (approx. 2 cups of cooked Jasberry rice)
2 Medium size ripe mangos
1 Cup of coconut milk
2 Tablespoons coconut sugar
½ Teaspoon cinnamon
1 Teaspoon vanilla extract

Method:

Cook Jasberry rice according to packet instructions, set aside.

Cut mangos in cubes to garnish, set aside.

Heat coconut milk in a pan.

Add coconut sugar.

Stir in cooked Jasberry rice, stir until all coconut milk is absorbed.

Turn off heat, add vanilla extract and cinnamon.

Serve and top with mango cubes.

 

Summer Jasberry, Feta, Asparagus Salad

Summer Jasberry, Feta, Asparagus Salad

Fresh, light and tasty with a delicious honey balsamic vinaigrette dressing, this summer salad is the perfect addition to any meal this summer. 

Ingredients for 4 servings:
80g Feta
½ cup yellow and red cherry tomatoes
Handful of Rocket
2 radishes sliced
¼ cup coriander leaves
Squeeze Lime juice
16 spears Asparagus
¼ cup Pine Nuts
2 avocados chopped
Drizzle Olive oil
1 cup Jasberry Rice (makes approx. 2 cups cooked)

Balsamic Vinaigrette Dressing:
2 tbsp honey
1 tbsp Dijon mustard
½ tsp salt
½ tsp pepper
1 large garlic clove minced
¼ cup balsamic vinegar
¾ cup extra virgin olive oil

Method:

Cook Jasberry Rice according to the packaging instructions.

Roughly chop the avocado into cubes, slice the radishes thinly and cut the cherry tomatoes into halves.

Heat the pine nuts in a saucepan. Remove from heat and set aside.

Coat the asparagus with olive oil, salt and pepper and cook in the oven at 204ºC for about 10 minutes.

In a small mixing bowl for the dressing whisk the honey, balsamic, mustard, salt, pepper and garlic. Add the oil and whisk to combine. Continue until mixed.

Crumble the feta into small cubes.

In a large bowl toss the rice, radishes, cherry tomatoes, asparagus, avocado, feta, rocket, pine nuts and coriander leaves. Drizzle with lime juice and finish by adding dressing.
