Ready to turn up the heat? Here is a great recipe to get you grilling in your Ooni pizza oven.
Succulent steak
Ingredients
2 thick-cut steaks such as scotch fillet or porterhouse (227–340 grams per steak is recommended)
Fine sea salt, to taste
Freshly ground black pepper, to taste
2 teaspoons extra-virgin olive oil
Your favourite steak rub, to taste (optional)
Method
Tip: Make sure you allow your steaks to reach room temperature before cooking.
Season your steak by gently patting salt and pepper into the meat with your steak rub (optional) and a little olive oil.
Start your Ooni oven; aim for 500˚C on the stone baking board inside.
When the oven is ready, place your seasoned grill plate or cast-iron pan inside to preheat. After five minutes remove the plate/pan. Using tongs carefully place your steak on the plate or pan.
Turn the Ooni down to medium or low to prevent overcooking. Return the plate or pan to the oven. For a 2cm cut steak, cook for 2-3 minutes on each side. Flip and rotate the steak to ensure even cooking.
Using a meat thermometer, check the temperature inside your steak. For rare, aim for 52°C; medium rare, aim for 57°C. Increments of 5°C for increasing levels of doneness.
Once cooked to your desired level, remove the plate or pan and transfer the steaks to a wooden cutting board.
Place a knob of butter on each steak, cover with foil, and let the meat rest for roughly the time it took to cook. This allows the juices to settle evenly, ensuring full flavour with every bite.
For maximum tenderness, slice across the grain of the steak with a sharp knife, serve with your favourite sides and enjoy.
