Issue 127 hits the shelves Monday, May 25 and we’re so excited to share a sneak peek with you!
In a world that seems full of chaos, we invite you to escape through the recipes in this issue. On sale Monday 25 May in New Zealand, and arriving in Australia a few weeks later, this issue is your passport to comforting dishes and far-flung flavours.
We share the stories and recipes of seven brilliant chefs whose heritage and travels have shaped their cooking, then break out the ladle to serve up soups from as far away as West Africa — the Spicy Peanut and Kūmara Soup will warm up even the coldest night!
Then we set our sights on Japan, featuring our stunning cover star Niku Udon (Japanese Beef Noodle Soup), before we change course for Morocco. The colours, textures and tastes in this feature evoke memories of old movies and star-filled nights. From Herby Chickpea Fritters to Slow-braised Shoulder of Lamb, you’ll be swooning. Spin the globe and we arrive in Italy to feast on the most perfect Porchetta, followed by a strong coffee and Orange and Pine Nut Ricciarelli. After a good night’s sleep, open your eyes, look out the window and you’ll see the Union Jack fluttering at a country pub, with punters enjoying Beef and Stout Pie, and a Jam Roly Poly for pudding.
We recreate some favourite Indian restaurant and takeaway dishes with a family-friendly Butter Chicken that allows you to dial the heat up or down to suit. Then we escape the winter weather in Indonesia with Amelia Ferrier’s tantalising menu, before taking a breather in the first-class lounge with Olivia Galletly. To finish, the light is clear and bright and snow covers the ground as we tuck into a range of Scandinavian sweets featuring the incredibly comforting Creamy Vanilla Rice Pudding with Cherry Compote.
