What is Jasberry rice?
Jasberry Rice is a special, dark-purple, variety of rice that has been developed through natural cross-breeding for over a decade. It is certified organic, gluten-free and non-GMO. Jasberry Rice is considered the world’s healthiest rice and a new superfood because of its uniquely high level of antioxidants. Jasberry Rice has 40 times more antioxidants than brown rice, and more antioxidants than kale, quinoa and blueberries! What’s more, Jasberry Rice is soft, aromatic, nutty and absolutely delicious.

Where does the purple colour in Jasberry Rice come from?
Jasberry is 100% natural, organic, raw and unprocessed. The purple colour comes from the powerful antioxidant called Anthocyanin. Anthocyanin also gives blueberries and other naturally purple food their distinctive colour. Our Jasberry Rice mix is an equal blend of Organic Jasberry Rice and Organic Brown Jasmine Rice.

Why is it called Jasberry?
The name Jasberry reflects the properties of this special rice. ‘Jas’ refers to the delicious taste of Thai Jasmine rice, and ‘Berry’ reflects the powerful antioxidant benefits, but Jasberry Rice has almost three times the antioxidants of blueberries!

What can I cook with Jasberry Rice?
Jasberry Rice is very versatile and extremely easy to cook. It goes well with any dish – just replace any other rice with Jasberry Rice and get all those antioxidants in your daily diet! Jasberry Rice even retains its soft texture when cold. Jasberry Rice doesn’t need to be rinsed before cooking.

Where is Jasberry Rice grown?
Jasberry Rice is only grown by small-scale farmers in the northeastern part of Thailand, which is the poorest region in the country. Today, Jasberry Co. Our Summer Jasberry Recipe Pick: Mango Jasberry Rice Salad
(prawns optional)

This versatile summer salad makes a delicious addition to barbecued dishes. Serve on its own, top with grilled prawns, or substitute with grilled fish or chunks of smoked salmon.

6 to 8 Serves

INGREDIENTS

1 cup Jasberry Rice
1 large mango, peeled and chopped
1 large red capsicum, (either bottled grilled or fresh) chopped or thinly sliced
1 bunch of asparagus, pan-fried, cooled and sliced into short pieces (or green beans)
2 spring onions, chopped
½ cup roasted, skinless unsalted peanuts
¼ cup freshly chopped coriander
¼ cup freshly chopped mint
12 large cooked, peeled prawns, hot from the barbecue if serving on top of the salad, or cooked and cooled if mixing in.

Dressing:
1 tbsp soy sauce
1½ tbsp lime juice
3 tbsp canola oil
1 tsp sesame oil
1 tsp brown sugar
⅛ tsp chilli powder (or add a chopped chilli to the salad)

METHOD

Cook the rice according to packet instructions. Turn out and allow to cool. You can speed this up if needed, by spreading on a tray and refrigerating.

Add the remaining salad ingredients and the prepared dressing.

Toss together and serve.
