Noma heads to Sydney for Summer
World-renowned restaurant Noma is set to swap Scandinavia for Sydney early next year.
Frequently named among the world's best restaurants, Noma will be making its way from Denmark to Australia for a Summer stint on Sydney's waterfront.
Following the resounding success of Noma's recent expedition to Japan, the twice Michelin starred restaurant will open its doors during January, in Barangaroo on Sydney Harbour.
Inspired about the diverse wealth of ingredients Australia has to offer, head chef René Redzepi says the trip will involve soaking in as much of the local culture as possible.
"Since my first trip to Australia several years ago I’ve been wanting to spend more time there— exploring, tasting, and understanding its ingredients," René wrote in a post on Noma's website.
"From the tropical fruit in the north, to the native pepper leaf of Tasmania; the pristine fish and shellfish of the very south, and all the new exotic wonders in between."
René and his team have already undertaken several research trips across Australia, where they met with producers, communities, farmers and chefs, and explored the country's intriguing landscape and culture.
The restaurant will serve a new lunch and dinner menu five days per week over ten weeks. The restaurant is expected to draw large numbers— while in Japan the Noma's waiting list garnered 60,000 names over just five weeks.
