1 large ripe avocado, halved and stone removed
1/3 cup chopped coriander
1 clove garlic, crushed
1 tablespoon tahini
2-3 tablespoons lemon juice
2 tablespoons olive oil
sea salt and freshly ground pepper
Place the avocado flesh and all the remaining ingredients in a food processor and blend until smooth. Season well adding extra lemon juice if needed.
