Delicious and Nutritious, Jasberry Rice is the perfect meal accompaniment

Feeling like a meal that will warm you up from the inside out? How about this fragrant Chana Masala served with antioxidant rich Jasberry Rice, naan and a fresh cucumber and herb raita. Your plate will be bursting with colour and flavour!

Serves: 4

INGREDIENTS

Curry:
1 small onion, peeled and grated
2 garlic cloves, crushed
2cm piece of ginger, peeled and finely grated
1 tsp ground cumin
1 tsp ground turmeric
2 tsp ground garam masala
¼ tsp chilli flakes
1 x 400g can chopped tomatoes in puree
2 x 400g cans chickpeas, drained
Fresh coriander leaves to garnish

Coriander and Mint Raita:
½ cucumber
½ cup natural unsweetened yogurt
1 Tbsp grated onion
¼ tsp ground cumin
Handful of fresh coriander and mint leaves
Squeeze of lemon juice

To serve:
1 cup Jasberry Rice (dry), makes about 3 cups cooked
Naan Bread

METHOD

To make the rice: Cook Jasberry rice mix as per the packaging instructions.

To make the coriander and mint raita: Grate the cucumber and squeeze out any excess liquid. Add yogurt, grated onion, cumin, fresh herbs and a squeeze of lemon juice.

To make the curry: Heat oil in a saucepan. Add the onion, garlic and ginger and cook over a low heat for approx. 5 minutes until softened, being careful not to burn.

Add cumin, turmeric, garam masala and chilli flakes. Stir, cooking for a few minutes until the spices smell fragrant.

Pour over chopped tomatoes and stir while bringing to the boil. Add the drained chickpeas. Cover and simmer for 10 minutes. Taste and season with salt as required.

Serve curry garnished with fresh coriander leaves and accompany with Jasberry Rice, naan bread and coriander and mint raita.

Degree of difficulty: Easy

Tip: You can freeze the curry for up to 2 months. Allow to cool and store in an airtight container. Thaw in fridge and reheat.
