Claire Turnbull's Pea and Mint Hummus

New Zealand nutrition expert Claire Turnbull shares one of her favourite easy summer recipes from her latest book 'Feel Good for Life'. Be in to win a copy below!
1 1⁄2 cups frozen peas
1 1⁄2 cups cooked chickpeas (1 x 400g can, drained and rinsed)
1 heaped tablespoon tahini
1 tablespoon water
zest and juice of 1 lemon
1 handful mint leaves
salt and black pepper
Put all the ingredients in a food processor and blend.
Serve with chopped veggies, wholegrain crackers or wholemeal pita bread wedges. Makes 6 serves.
Top Tip: You can also add a small amount of feta cheese to this if you like!
