About the chapters
Handily organised into eight chapters, dish SUMMER delivers recipes for all occasions.
Come for a drink
Whether gathering friends for a late-afternoon beer after a day at the beach or breaking out the cocktail shaker for something a little fancy, there’s no better time of year to put the call out to ‘come for a drink!’ It’s the thought of what nibbles to serve that can often have hosts scratching their heads in consternation. We make it easy with a round-up of simple, tasty morsels to share– from Chicken Katsu Sliders, to Prawn, Zucchini and Lemongrass Fritters there’s something to suit all-comers.
Stay for dinner
It’s an invitation proffered around New Zealand on a regular basis, and even more so in the summer months. Not wanting to let the fun times end after an afternoon get-together, we have a quick rummage in the fridge, then nip to the supermarket to grab a few extras so we can throw together an impromptu feast. Nothing could be easier than Spicy Salami, Prosciutto and Mozzarella Pizza or Baked Prawns with Lemon and Feta. Baked Spanish Rice with Chicken and Chorizo is perfect to feed a crowd while Claire’s Best-ever Fresh Catch Beer-battered Fish and Chips is almost life-changing.
Baked Prawns with Lemon and Feta
Fire up the barbie
We love a quintessential Kiwi barbecue, here we elevate the regular offerings with stunning options such as Grilled Corn with Whipped Ricotta and Smoky Chilli Butte, Sticky Tamarind and Maple Syrup Glazed Pork Ribs, and the new classic, Beer Can Chicken with White Barbecue Sauce.
Bring a salad
Next time the call goes out to ‘bring a salad’ let us help take your salad-game to the next level! Check out the Eggplant, Spinach and Couscous Salad with Lemony Yoghurt Dressing and Warm Roasted Potato Salad with Parmesan, Walnut and Garlic Mayo, they’ll be threatening to be the star of the show. Meanwhile the Barbecued Pork, Mango and Herb Salad is practically a meal on its own.
Burger mania
One of life’s simplest pleasures is taking a big bite out of a loaded burger as you break through soft bun to the layered goodies inside. Here we present the all-time favourite Kiwi Lamb Burger appropriately crammed with beetroot, tomato, and a soft-fried egg before taking a walk on the wild side with Crispy Spiced Onion Fritter Burgers with Mango Chutney, Chorizo and Garlic Prawn Burgers and the vibrant Moroccan Lamb Burgers with Grilled Haloumi and Pistachio Salsa. With so many options we reckon the only solution is to work your way through the whole section… before you start again!
What’s for dessert?
After the main event it’s always nice to finish the evening with a tempting dessert, and in summer we’re leaving behind the stodgy mid-winter puds for summertime tarts, ice-creams, and fruity delights. Making the most of this season’s bounty we have Rhubarb and Strawberry Frangipane Tarts, Boozy Barbecued Stone Fruit Parcels and Summer Fruits in a Lemongrass and Citrus Syrup. To cool down in style there’s Luscious Baklava and Pistachio Ice Cream and stunning Lemon Meringue and Blueberry Pie Ice Cream. And if you’re after a total showstopper, you can’t go past the Tiramisu Espresso Martini No-bake Cheesecake.
Fill the tins
What could be better than a big pot of tea and a sweet treat as you take a break from the afternoon sun to enjoy a book, crossword, or a game of scrabble? We have you covered with some of our all-time favourite baking recipes – the Sticky Fingers Ginger Loaf with Butterscotch Glaze has reached legendary status with dish readers, as has the Take Me with You Cherry Almond and Coconut Slice, which is perfect for the picnic hamper. Filling the tins has never been easier, or more delicious.
Saucy bits
To put a little more somethin’ somethin’ into any meal, may we present our fabulous range of sauces, mayos, dressings and relishes – guaranteed to elevate every occasion!
