INGREDIENTS
2 cloves garlic, crushed
1 long red chilli, seeded and finely chopped
1 tablespoon caster sugar
2 tablespoons lime juice
3 tablespoons fish sauce
3 tablespoons rice vinegar
METHOD
Combine all the ingredients in a bowl. If you want a fiery nuoc cham, leave the seeds in the chilli when finely chopping.
