Hot Apple Toddy

Use your favourite tipple when making this toddy. Whiskey, rum and bourbon all work well with apples.
Serves: saffron and star
INGREDIENTS
4 cups clear apple juice
2 cinnamon sticks
3cm piece fresh ginger, peeled and sliced
long strips zest 1 lemon
1 tablespoon lemon juice
1 tablespoon honey
½ cup whiskey or more to taste
METHOD
Place all the ingredients except the whiskey in a saucepan and simmer gently for 5 minutes.
Add the whiskey and pour into heatproof glasses.
Garnish each with a cinnamon stick if desired.
